Also, eating "poverty food", some of which is actually quite good, brings a feeling of solidarity and equality with those who can only afford to eat that way. A peanut butter sandwich on white bread (a strange concept to people outside of North America) is about the simplest, most basic thing you could possibly eat, but it is good nutrition, and can be had for pennies. Perhaps this could catch on, and the Church could then say "see, you've got this, it's not so bad, and aside from the ecological factor, consider the penitential aspect as well".

Growing wheat for bread harms the ecology a lot more than a cow plus the grass she eats.
